The other side of the Red or Green question, Hatch red chile is a huge part of New Mexican cuisine! Although most people think of Hatch red chile as only dried red chile pods, it also encompasses fresh red chile too. Without red chile, New Mexican cuisine, particularly in the colder months would be incomplete. Red Chile Sauce Unlike Hatch green chile, red chile is typically not used as a topping. Our story

Since 1962, Farmers Market has been a household name in Albuquerque, spanning four generations and deeply rooted in Albuquerque's history. Founded by my great grandfather, Ralph Basila, a Lebanese immigrant with an entrepreneurial spirit, our journey began in the 1950s with Basila Produce, a wholesale produce company. Farmers Market was born from this foundation, embodying the values of hard work, quality, and community. In 1977, we were the first store to start roasting green chile in Albuquerque, a tradition that quickly became a beloved part of our city's culture. We've been roasting chile for 47 years, longer than anyone else in town, and our expertise is unmatched. At our peak, we sold over 400 sacks of chile a day at our busiest location, a testament to our dedication to providing the freshest, most flavorful chile to our community. Today, Farmers Chile Market continues to honor our rich heritage while embracing the future. As we pass the torch to the next generation, we remain committed to delivering the same exceptional quality and service that our customers have come to expect. We're more than just a market; we're a family tradition, a taste of history, and a symbol of Albuquerque's vibrant spirit.
